I did something to my system and my categories and forums disappeared. I have a backup. Can someone please tell me what file(s) I need to restore? HELP please.

Well, I backed up every single file on my system. So I assume that means that the database is backed up too.

Sorry to tell you this but it sounds like you only backed up the file structure and NOT the database.

Backup tutorial here.

You can delete individual posts logged in as admin/moderator from the forum itself.
